Leftovers aren't usually this good...

This is one of those food posts that isn't filled with step by step photos because I didn't realize the food would be good and "shareable" until I made it :)  Sooooo, you get pictures of the final product!

See that bite taken out of the taco?  That was bite number #1.  Before bite #2, I grabbed the camera, snapped a couple photos and then took bites #2, #3, # 4,5,6,7,8,9, and...gone.

These tacos took just a few minutes to put together, but only because i was using leftovers.  The night before we had a"wish it was summer" meal of BBQ chicken from the grill, corn on the cob and THIS POTATO SALAD with my favorite HOMEMADE MAYO.

So today, when I needed a quick lunch, I just threw the leftovers together with my classic chicken salad ingredients and it was DELICIOUS.  You can add whatever you typically like in chicken salad, but it is not my classic without red (purple) onions and red (purple) grapes.

Cooked Chicken - 1/2 - 1 breast, cubed
MAYO - 1/4-1/2 cup
Red Onion - 1/4 - 1/2 onion, diced into tiny pieces
Red Grapes - 2 to 3 handfuls, chopped
Cooked Corn - 1-2 ears

Celery is a great addition, as is relish and fresh herbs.  My leftovers (chicken, corn and mayo) were already seasoned, so I didn't add anything else, but you might add a dash of salt and some additional herbs.  Of course, the mayo is not good for you, so you can substitute a lighter dressing, or simply eat a dry chicken taco, but it surely will not taste as yummy :)

The true trick to making these tacos delectable is "bubbling" them on the stove.  

Does anyone else call it "bubbling"?

Do you guys know how to warm your tortillas by bubbling them on the stove?  
It's so simple and takes just a second and makes ALL the difference.  
I mean imagine your mom giving you bread straight out of the package with butter and calling it toast.  
I mean, I love bread buttered straight out of the package and all, but it just isn't toast, right?  Right?
Check out the texture on that tortilla...that is a serious taco...mmm!
